Instructions
Preheat the oven to 400°F (200°C).
Rinse the sweet potatoes and pierce them with a fork. Bake on a lined baking sheet for 45-60 minutes until tender.
In a mixing bowl, combine shredded chicken, BBQ sauce, black beans, and corn. Stir until well coated.
Remove baked sweet potatoes, cool slightly, and cut a slit down the center. Fluff the insides and season with salt and pepper.
Scoop the BBQ chicken mixture into each sweet potato and top with shredded cheddar cheese.
Return to the oven for 10-15 minutes until the cheese is melted and bubbly.
Remove from oven, cool slightly, and garnish with green onions and optional toppings.
Notes
Optional toppings include sour cream, fresh cilantro, or avocado slices.
