In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract, if using. Stir the mixture vigorously until it is completely blended and achieves a smooth, creamy consistency.
In a separate bowl, gently mash half of the mixed berries using a fork, preserving some whole berries to provide delightful textural contrast.
Begin layering the pops by dividing one-third of the yogurt mixture evenly among your ice pop molds, filling them about one-third of the way full.
Next, add a layer of the mashed berries over the yogurt mixture, distributing them evenly across each mold for a burst of fruity flavor.
Sprinkle a generous layer of granola over the berry layer, providing crunch and added flavor. Follow this by adding another layer of the yogurt mixture, covering the granola completely.
Repeat the layering process: add a layer of yogurt, followed by another layer of berries, and then a final sprinkle of granola. Continue until the molds are filled to the top, ensuring each layer is well-distributed.
Once all molds are filled, insert sticks into each mold. Place the molds in the freezer and allow them to freeze for at least 4 to 6 hours, or until they are completely solid.
To remove the pops from the molds, run warm water over the outside of each mold for a few seconds until the pops slide out easily.
Serve the pops immediately, garnished with a few fresh berries on top for an attractive presentation and an extra burst of flavor, if desired.
