Instructions
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.
In a large pot, steam the cauliflower florets for about 5-7 minutes until tender. Drain well and let cool slightly.
Use a clean kitchen towel or cheesecloth to squeeze out excess moisture from the cauliflower. This step is crucial for the texture of the pizza bites.
In a mixing bowl, combine the cooled cauliflower, mozzarella, parmesan, almond flour, beaten eggs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly combined.
Take small portions of the mixture (about 1.5 inches in diameter) and place them on the prepared baking sheet.
Bake the bites in the oven for 25-30 minutes until golden brown and crispy.
Remove from the oven and brush or spoon the hot sauce evenly over the pizza bites.
Return the bites to the oven and bake for an additional 5 minutes to set the sauce.
Garnish with fresh parsley if desired. Serve hot, ideally with a side of ranch or blue cheese dressing for dipping.
