Instructions
Prepare the Strawberries: Begin by ensuring your strawberries are fully dry; any moisture on them will hinder the chocolate from adhering properly. Pat them dry gently with a paper towel if necessary.
Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips with the coconut oil. Microwave the mixture in 30-second intervals. After each interval, stir well to promote even melting until the chocolate is fully melted and smooth in texture.
Assemble the Pops: Starting with your strawberries, carefully insert a lollipop stick or wooden skewer into the top of each one, pushing it about halfway down to secure it.
Dip the Strawberries: Hold the strawberry by the stick and carefully immerse it into the melted chocolate. Ensure the strawberry is thoroughly coated, and gently shake the strawberry to let excess chocolate drip back into the bowl.
Decorate: For added flair, while the chocolate is still warm, roll the chocolate-covered section of the strawberry in your choice of sprinkles or crushed nuts. This not only adds flavor but also a colorful touch.
Chill: Line a baking sheet with parchment paper and arrange the decorated strawberries on it. Refrigerate them until the chocolate has fully hardened, which should take about 30 minutes.
