Instructions
Preheat your oven to 325°F (160°C). Prepare a 9x9-inch baking pan by greasing it lightly and lining the base with parchment paper, allowing some overhang on the sides to facilitate easy removal later.
In a medium-sized mixing bowl, combine the graham cracker crumbs and melted unsalted butter. Stir the mixture with a fork or a spatula until fully incorporated. Press this mixture firmly into the bottom of the prepared pan to create a compact and even crust layer.
In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it reaches a smooth and creamy consistency. Gradually incorporate the granulated sugar, continuing to mix until the sugar is fully dissolved and the mixture is homogenous.
Add the eggs to the cream cheese mixture, one at a time. Mix on low speed after each addition until just combined; be careful not to overmix to maintain the cheesecake’s creamy texture.
Gently mix in the vanilla extract, sour cream, and all-purpose flour until fully combined, ensuring no lumps remain. Carefully fold in the rainbow sprinkles, distributing them evenly throughout the batter for a festive touch.
Pour the cheesecake batter over the prepared graham cracker crust. Use a spatula to spread the mixture out evenly, smoothing the top. For an extra pop of color, sprinkle additional rainbow sprinkles over the surface.
Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center has a slight jiggle. The cheesecake will continue to firm up as it cools, so don’t worry if it’s not completely solid in the center.
Once baked, remove the cheesecake from the oven and allow the bars to cool in the pan at room temperature for about 1 hour. After that, transfer the pan to the refrigerator and chill for at least 4 hours, although overnight is ideal for the best texture.
When fully chilled and firm, gently lift the cheesecake bars out of the pan using the parchment paper overhang. Cut into squares using a sharp knife, and serve chilled.

For an extra touch, serve the cheesecake bars on a colorful platter, and garnish each piece with a few extra rainbow sprinkles and a dollop of whipped cream for a festive dessert display!
