Instructions
Start by preheating your oven to 400°F (200°C).
In a mixing bowl, thoroughly combine the breadcrumbs, finely grated Parmesan cheese, minced garlic, Italian seasoning, smoked paprika, salt, and pepper.
Create a breading station: in one bowl, pour your beaten eggs, and in another, place the breadcrumb mixture.
Take a piece of chicken and first dip it into the beaten eggs, then roll it in the breadcrumb mixture, pressing gently to adhere the crumbs.
Arrange the coated chicken bites on a baking sheet lined with parchment paper and lightly spray or drizzle with olive oil.
Bake in the preheated oven for 15 to 20 minutes, flipping halfway through for even crispness.
Once baked, remove the chicken bites from the oven and allow them to rest for about two minutes.
Garnish with freshly chopped parsley before serving.
