Instructions
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
In a robust mixing bowl, combine the diced sweet potatoes with the olive oil, minced garlic, dried oregano, smoked paprika, and a generous pinch of salt and pepper.
Use your hands or a spatula to carefully toss the sweet potatoes until they are thoroughly coated with the oil and spices.
Transfer the sweet potato mixture onto the prepared baking sheet, spreading them out in a single layer.
Roast the sweet potatoes in the preheated oven for 25-30 minutes, flipping halfway through.
During the last 5 minutes of roasting, sprinkle the grated Parmesan cheese over the sweet potatoes.
Once roasted to perfection, remove the sweet potatoes from the oven and let them cool for a few minutes. Serve warm, garnished with fresh parsley.
