Instructions
In a medium-sized mixing bowl, combine the maple syrup, soy sauce, Dijon mustard, minced garlic, grated ginger, olive oil, black pepper, and cayenne pepper (if using). Whisk until smoothly incorporated.
Place the salmon fillets in a shallow dish or resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is coated. Cover and refrigerate for at least 30 minutes, up to 2 hours for optimal flavor.
Preheat your oven to 400°F (200°C) while the salmon marinates.
Line a baking sheet with parchment paper or aluminum foil. Arrange the marinated salmon fillets skin-side down on the sheet, saving the leftover marinade in a small bowl.
Bake the salmon for 12-15 minutes, or until it flakes easily with a fork. In the last 5 minutes, brush the tops with the reserved marinade.
Remove the salmon from the oven, sprinkle with sea salt to taste, and garnish with freshly chopped parsley or sliced green onions before serving.
