Instructions
Begin by preheating your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper, ensuring an easy release for your cookies.
In a medium mixing bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt until evenly blended. Set this dry mixture aside for later use.
In a larger mixing bowl, use an electric mixer to cream together the softened butter and granulated sugar. Beat for approximately 3 minutes, or until the mixture becomes light, fluffy, and pale in color.
Add in the large egg, vanilla extract, and peppermint extract. Beat the mixture until all ingredients are thoroughly incorporated and the batter is smooth.
Gradually introduce the dry ingredient mixture to the wet batter, stirring gently until just combined. The resulting dough should be soft yet manageable, not overly sticky.
Scoop out tablespoon-sized portions of the dough and roll them into balls. Arrange these dough balls on the prepared baking sheet, making sure to space them about 2 inches apart to allow for spreading.
Using your thumb or the back of a teaspoon, gently press down in the center of each dough ball, creating a small well or indentation that will hold the chocolate filling.
Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges of the cookies are set and the tops appear firm. Once baked, remove the cookies from the oven and let them cool on the sheet for a few minutes.
While the cookies are still warm, if the indentations have puffed up, gently press the centers back down with a small spoon. Now, fill each indentation with a few chocolate chips, allowing them to nestle into the cookie.
Return the cookies to the oven for an additional 2-3 minutes, just enough for the chocolate chips to melt to a smooth consistency.
Once out of the oven, generously sprinkle crushed peppermint candies over the melted chocolate centers, enhancing the festive look and flavor. Allow the cookies to cool completely on a wire rack, ensuring they set properly.

For an extra festive touch, serve with a sprig of fresh mint.
