Instructions
In a large skillet, heat the olive oil over medium heat until shimmering. Add the ground chicken, breaking it apart with a spatula, and cook until it turns a golden brown, approximately 5-7 minutes.
Once the chicken is browned, stir in the minced garlic and freshly grated ginger. Cook for an additional minute, allowing the flavors to meld and become fragrant.
Add the finely chopped red bell pepper and the diced water chestnuts to the skillet. Sauté for an additional 3-4 minutes until the bell peppers become tender and vibrant.
In a small mixing bowl, whisk together the sweet chili sauce, soy sauce, and rice vinegar until well combined. Pour this sauce over the cooked chicken and vegetable mixture, stirring thoroughly to ensure everything is evenly coated. Allow it to simmer for 2-3 minutes until heated through.
Season the mixture with salt and pepper to taste, adjusting to your preference.
For serving, take an individual lettuce leaf, and spoon a generous portion of the sweet chili chicken mixture into the center, creating a wrap.
Garnish each wrap with a sprinkle of sliced green onions, sesame seeds, and a few fresh cilantro leaves for added flavor and presentation.
