In a spacious mixing bowl, combine the bite-sized chicken pieces with buttermilk, garlic powder, onion powder, smoked paprika, cayenne pepper, and season with salt and pepper. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Pour the breadcrumbs into a shallow dish. Take the marinated chicken pieces from the refrigerator, allowing any excess marinade to drip off. Roll each piece in the breadcrumbs.
Arrange the coated chicken bites in a single layer in the air fryer basket. Cook the chicken bites for 10-12 minutes, flipping them halfway through.
In a large bowl, add the air-fried chicken bites and gently toss them with buffalo sauce until each piece is thoroughly coated.
Carefully place the zesty buffalo chicken bites onto a serving platter. Garnish with finely chopped fresh parsley.
