Instructions
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
In a small mixing bowl, whisk together the extra virgin olive oil, minced garlic, lemon zest, lemon juice, dried oregano, and a generous pinch of salt and pepper until well combined.
In a shallow dish or large resealable bag, place the salmon fillets and pour the marinade over them. Ensure that each fillet is generously coated with the marinade and allow to marinate for at least 15 minutes.
Lightly grease the air fryer basket with cooking spray or a drizzle of olive oil.
Carefully place the marinated salmon fillets in a single layer in the air fryer basket.
Air fry the salmon for 8-10 minutes, adjusting the time depending on the thickness of the fillets until it flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Once cooked, gently remove the salmon from the air fryer and let it rest for 2-3 minutes.
Garnish the salmon with a sprinkle of fresh dill or parsley before serving.
